Quinoa and Black Bean Salad
Here is a tasty main or side dish recipe using quinoa that I adapted from Gourmet Magazine. Quinoa (pronounced keen-wah) is a fast-cooking, protein packed whole grain; it is a complete protein, meaning it has all nine essential amino acids in it.
Quinoa and Black Bean Salad
2 tsp. grated lime zest
2 Tbsp. lime juice
1 Tbsp. melted butter
2 Tbsp. olive oil
1 tsp. sugar
1 cup uncooked quinoa
1 14-ounce can black beans, rinsed and drained
2-3 tomatoes, diced
4 scallions chopped
1/3 cup chopped cilantro
To make dressing, whisk together lime juice, lime zest, oil, butter, sugar, ¼ tsp.salt and 1/8 tsp. pepper in a small bowl. Cook quinoa per package directions. Place quinoa in a large bowl, toss in dressing, then stir in remaining ingredients.
